The best star pilot in the galaxy is none other than Anakin Skywalker. As an Aethersprite Jedi pilot at initiative 6, Anakin really can do it all. His pilot ability seals the deals as far as extreme piloting goes.
After Anakin fully executes a maneuver, if there is an enemy ship in his forward primary arc at range 0-1, or in his bulls-eye arc, he may spend 1 Force charge to remove 1 stress token. This will allows Anakin to perform extreme maneuvers without the worry of having stress tokens hindering his flight path. 
Even a Jedi needs some help now and again, and the best support for an Aethersprite pilot is an R4 Astromech. R4-P is an astromech upgrade that kicks in before you execute a basic maneuver: you may spend 1 of 2 charges to execute that maneuver at a reduced difficulty. This can make a red maneuver, white, and a white maneuver, blue, just in case Anakin needed another way to clear stress. 
Anakin will need an upgraded Aethersprite to handle his piloting skills. The Delta-7B title gives an extra primary attack and 2 shields at the cost of -1 agility. This can give Anakin a better chance of blowing away those pesky ships that gang up on the Jedi! Given that his maneuverability will be superior, it is a good idea to manage his weapons systems wisely. 
Calibrated Laser Targeting is a modification that can help Anakin focus his power. While performing a primary attack, if the defender is in your bulls-eye arc, add 1 focus result. This focus can be changed with a Force charge or even a focus token, but it goes hand-in-hand with Anakin’s ability to reduce stress from ships in his bullseye arc.
